1200 utes already have the same bottom arms and caster rods as B310 Sunny, they just use a different steering arm to suit the smaller 1200 strut.
*unless the very early 1200 utes have 1200 sedan/coupe/wagon style arms and caster rods?*

I put 310 bottom arms in my coupe with (new) larger ball joints that they run.
I had to use late model 1200 ute steering arms, which run the bigger ball joints, but the smaller (80mm) bolt centres that the 110 struts have (where as 310's run 85 or is 90mm?). I think the only difference in length of the bottom arms on 110 and the 310 is the actual overhang of the ball joint, not overall length of the arm itself - But I could be wrong.

Kitch is BANG on the money.
Just fit the longer B310 ball joint. (the part number escapes me [BJ134?] or something like that) It's listed at BNT as being for an HB310. BOOM! instant neg camber. But you will need to tweek your wheel alignment though. Pushing your steering arms further out will make it toe in.

But if the later model ute's already use the B310 Lca's wouldn't that mean they already use the larger ball joint but just, as kitch says, the smaller 80mm bolt centres and is it that 85/90mm that makes the difference from ute to B310? And in that case cant I just replace the bolt centres?
Also if I use new ball joints will it screw me for space with the 17's (Datsun tech wiki - The longer B310 ball-joint will gain negative camber. The downside is it pushes the tire to the outside, and widest tires will foul on the outer fenders, 195-width tires are the widest that will fit with the B310 setup, but require wheels with appropriate backspacing)?

Maybe.
The longer ball joints were factory fitted to (fucked if I know what). The listing at BNT being for a HB310. As we know there is no HB310. But H is the factory Datsun prefix denoting larger capacity engine. (Where more that one displacement was offered) IE, KP510- L16 powered 510 coupe; KH510- L18 powered 510 coupe.
I'd doubt that the 1200 utes would have had the longer joint out of the box, as it's a 310 part as a rule.
Another factor that might be an issue for you (While we're on the topic of wheel+tyre clearance, would be that the S13 brake conversion also increases the wheel track width with the thickness of the rotor hat.
