I am a fan of double axle Transporters
In my limited experience single axle's seem to be a bit shorter and lighter construction and Usually Not braked
Double axle's tend to be braked and tow a bit better.
I can send you a photo of my old mans double axle with steel deck for reference if you like.

Doesn't matter as long as you let me borrow it whenever I want for free.

I think I've only ever towed with dual axle ones, never really had a problem apart from when you want to move them around by hand.

Yeah Tandems are not as easy to live with around the section, harder to manoeuvre around by hand. On the road the Tandem tows better, although is harder on tyres if you are manoeuvring them around a lot. Depending on what you are towing with you may not notice the difference. Early on I always used a tandem, lately I have only used a single, and towing the Zed to Timaru behind the Commodore was fine. The Zed isn't heavy but still it isn't a 1200 and the single axle towed nice at the speed limit. Even unbraked it was very comfortable.
I have wondered the same question, and think if I was to build my own it will come down to what storage I have, if the car needs to sit on it at all times it will probably be a tandem, or I would consider a single with a jockey wheel, my preference would be a single just for the ease of manoeuvrability.

Depends on what you're towing.
For a small car (Most datsuns, apart from the ceddy's) A single is okay.

Towed both, singles tend to make the back of you car bounce up and down more as they pivot on the one axle but hold the road reasonably similar, one thing I like about tandem is if a wheel bearing collapses or tyre blows you still have a extra wheel on that side to stop things getting hairy and get get you home.

If you have a tandem with a jockey wheel, wind the jockey wheel all the way down (or until the front wheels are close to off/off the ground) It then can be maneuvered a lot more easily
