120y to restore?

Good evening,

I'm new on restoring and on the forum.
My dad has a Datsun 120y and we want to restore it to the original.
We know that the red color isn't the right one and so on and on.

Do anyone know any guide to follow to see if everything is original?
Places to buy pieces for it?

A workshop manual should be a good start of reference.
