Dattodevil would be the man to talk to. He seems to have the dubious honor of being our resident sidedraft guru. No doubt he'll chime in if he can help.
I did once see a book which gave some baseline jettings and air bleed sizes for a given engine size.

They don't call me the man with the rubber arm for nothing you know.............

That would be Pat Bradens book, awesome book, wish i read that before i purchased the Webers, saw his little guesstimation to chose jets but the outcome in the book was a bit off his guestimate,

it depends on your engine, everything can influence what jets/venturis you need.

Was looking at a mild cam and electronic distributor, not looking at anything to grunty, just to get a bit more out of a15, hills are pretty steep in dunedin.
the dcoes i have now have 32mm venturies, aux venturie 4.50, emulsion tube f9, main jet 1.30, air-corrector 2.00, Idle-jet f8, Pump-jet 0.35, and needle-valve 1.50, Setup for a 1779cc Alfa 1750
would these venturies be far too big?

32 would be too big for a mild cam

Yes, the smaller the venturis the better (to a point)
